Embracing Creative Cauliflower Creations!



Cauliflower, an unassuming and humble vegetable that is often overlooked, possesses remarkable versatility that can be transformed into lots of delicious dishes.


With its mild flavor and robust texture, cauliflower serves as a blank canvas for easy and nutritious culinary creativity. From comforting classics to innovative creations, there are endless possibilities to explore with this cruciferous vegetable.


To create a vibrant and healthy dish, consider roasting cauliflower florets in the oven along with a variety of tasty cheeses and seasonings or colorful vegetables. Incorporate your preferred legume, chickpeas, and complement the dish with a flavorful dressing to transform this uncomplicated meal into a culinary sensation.


Another favorite of mine is swapping the traditional mashed potatoes for a lighter alternative with cauliflower. If you'd like to try this, just mash steamed cauliflower florets and blend them with a wee bit of melted butter and/or a touch of cream and seasoning of choice. This will give you a cauliflower purée that has a comforting texture and flavor without the carb-heavy guilt of using potatoes!


Here comes my easy-to-make recipe for oven-roasted cauliflower florets with Parmesan cheese topped with sliced fresh scallions and diced dates.



Ingredients for the Oven Roasted Cauliflower florets with grated Parmesan cheese:

1 x average sized cauliflower

Olive oil

Grated Parmesan cheese, to taste

Seasoning of choice -  (Salt, Pepper, Red Pepper Flakes, Cumin, Garlic granules)


For serving:

  • Freshly chopped scallions or chives and, if you like a touch of sweetness, diced pitted dates.

  • Also if you like, you can serve the cauliflower florets on a bed of salad greens of choice and top with additional grated parmesan slithers as seen in the first photo above.

  • Another idea that you can create with this recipe is to serve the roasted cauliflower stacked on tomato slices with steamed greens as seen in the photos here below . . . . as long as you have ripe, ready to eat tomatoes and some of your favorite Greek steamed leaf veggies or steamed spinach!


Preparation Method:


 Preheat the oven to 200 C/ 400°F


  1.  Line a rimmed baking sheet with parchment paper for easy cleanup.

  2. Wash and prep cauliflower into evenly-sized small florets, using your hands or a sharp knife. Aim for uniform thickness to ensure even cooking.

  3. Place florets the baking sheet and drizzle with olive oil.  Make sure not to overcrowd pan.  Season with salt & pepper (optional).

  4. Roast in hot oven for about 15 or until nearly cooked.

  5. Take out of oven and sprinkle with grated parmesan and /or red pepper flakes or other spices or aromatics of choice.



Place back in oven and roast for another few minutes or until cauliflower florets are golden brown and the cheese has melted.


Place on serving dish and sprinkle with freshly chopped scallions, dates and extra Parmesan cheese flakes (optional) – as seen in photo below.
