Girls Night In - Always a Great Idea!

This week in Reykjavik, Iceland I was really lucky to be invited to a fun and relaxing Girls Night In evening hosted by my friend and cousin Haldόra . . . who had decided to invite some of her besties to her home for an extra-special dinner consisting of outstanding Icelandic mussels and one of her specialties; an amazing wild mushroom risotto . . . that she makes with great skill!



I volunteered to help with the cooking and ended up steaming the mussels in a flavorful broth made with white wine, sliced leek, shallots, yellow onion, a little garlic as well as some fresh lemon juice & grated lemon zest . . . basically my mom’s classic recipe with a few twists - Mom's Moules à la Marinière Recipe!



The recipe is easy and quick to make and perfect for entertaining, especially when you have somebody in the kitchen to help out with the last minute details. However, if you are on your own, you can always under-cook the mussels a bit and finish cooking them in the broth in a warm oven (140C) for 15 - 30 minutes!



If you have a large kitchen, you could always gather your besties around the kitchen table & pour them a glass of wine /or other beverage & while chatting finish the cooking & serve up all your tasty delicacies!



To end this amazing meal with an international touch, Haldόra had managed to get hold of yummy Icelandic strawberries from a nearby farm as well as locally, custom made French style macaroons, ultra rich Danish chocolates and Baklava . . . that she bought from Syrian immigrants at a local farmer's market . . . all tops and real treats for a sweet ending to an inspirational Girls Night In!
