Healthy Frozen Skyr/Yogurt Bars!



Simple and quick to make, frozen Skyr/yogurt bars are the perfect treat, especially in summer, when in some countries like Greece, where it can get really hot! Topped with finely chopped fresh berries and/or other crunchy favorites like granola, nuts, seeds or even chocolate chips these delicious, healthy and satisfying frozen snacks . . . are great any time of the day; even for breakfast!


I’ve been making the recipe below for years, topped with just berries and made with either Icelandic Skyr or low fat strained Greek yoghurt. You can of course use full fat, lactose free or vegan yoghurt and if you like, omit the honey or sweeten the Skyr/yoghurt mixture with stevia.


Ingredients


1 large banana (150g), peeled

½- 1 tblsp fresh lemon juice

150g strained Greek yoghurt 2% or Icelandic Skyr (plain)

1 tblsp liquid honey

¼ cup fresh strawberries, finely chopped

¼ cup fresh blueberries, finely chopped

Optional:

¼ cup granola, or finely chopped nuts and/or semi-sweet chocolate



Preparation Method


Line a rimmed baking sheet/or tray with wax or parchment paper. This will help you to remove the frozen yoghurt bar easily from the tray.


Place the peeled banana into a bowl and mash with fork. Add the fresh lemon juice, the yoghurt and the honey and mix well.


Pour the yogurt/banana mixture onto the prepared baking sheet and spread evenly so that it fills the shape. Top with the strawberries, blueberries and any other topping of choice; like granola/nuts/seeds/chocolate chips or crushed cookies.


Place in the freezer until the yogurt is firm, about 3 - 4 hours. Then take out and break or cut the yoghurt into pieces, or bars, and place into a plastic container or zip lock bag and store in freezer until ready to enjoy.


Tips!

  • When fresh berries are not available, you can use frozen berries but remember to chop them while still a bit frozen.

  • If you don’t like berries, try a combination of finely chopped mango and kiwi or peaches . . . or any other combination you like.
