I grew up having this wonderful treat on many special family occasions and always on Christmas Eve or New Year’s Eve . . . and since I didn't make it for Christmas, I'm definitely making it for New Year's Eve.

Lemon Pineapple Mousse Recipe
Ingredients
6 sheets gelatin
3 large eggs
125 g sugar
1 x 450 g tin pineapple (fruit and juice)
1 large lemon finely grated lemon zest and juice
2 ½ cups whipping cream
Garnish: Lemon/lime rind, pineapple and if you like, grated chocolate or coconut
Preparation Method
Place gelatin sheets in cold water for about 5 minutes to soften. Squeeze gelatin sheets to drain off excess water and place in a bowl over boiling water to melt.
With an electric mixer, beat eggs and sugar together until light and fluffy. Add pineapple juice from tin, lemon zest and mix.
When the gelatin sheets have melted, remove bowl from boiling water, add lemon juice and mix. Pour into egg/pineapple juice mixture while stirring continuously.
Whip cream and add to egg/juice mixture. Mix carefully. Pour mixture into a nice serving bowl or into individual glasses and refrigerate for about 4 hours or overnight.
When the mousse has set, garnish with lemon rind or pineapple fruit cut into small cubes or pieces. Just before serving sprinkle with grated chocolate or grated coconut.
Yield: Serves 6
For another serving option try layering the pineapple fruit with mousse in glasses or bowls and garnish with pineapple and a dollop of whipped cream.
If you like a bit stronger lemony taste you can use lime zest. I also like to use lime for decoration as you see in photo.

Never use fresh pineapple for this recipe as it will not work with geletain!
