People frequently inquire if I prepare meals for myself daily and whether cooking for one is intimidating. I usually respond . . . quite the opposite! Eating alone can be a rewarding culinary journey, and in this blog post, I want to explore and celebrate the art of cooking for one, making it a delightful and flavorful experience.

Dedicating a few hours each week to meal planning and prepping can be revolutionary. I like to do most of my food shopping once a week . . . starting by going early morning to my local Farmer's market to stock up on seasonal veggies, herbs, fruit, nuts, honey as well as free range eggs.
Typically, I ensure my freezer is filled with individually wrapped portions of poultry, shellfish, fish, meat, and cooked pulses. Nonetheless, if I find myself running low on other staple foods, I'm lucky to have a variety of local suppliers nearby, allowing me to conveniently pick up a few items if needed.
Consider chopping vegetables and marinating proteins in advance. For example, if you cook a large batch of quinoa or brown rice, you can freeze some or even use it throughout the week in stir-fries or salads. By portioning out meals in containers, you not only stay organized but also minimize food waste.

2. Embrace Simplicity
Sometimes, less is more. Quick, simple recipes can be just as satisfying. Think of a microwaving a make classic stir-fry or a refreshing salad that can come together in under 15 - 20 minutes. One of my favorite quick and simple meals is microwaving a piece of fresh cod, salmon or other boneless fish in the microwave with fresh lemon juice and serve or top it with veggies or salad of choice . . . an uncomplicated meal and something you can enjoy cooking without feeling overwhelmed.

3. Utilize Leftovers Creatively
Cooking for one makes leftovers a true gem! Use your creativity to turn leftovers into simple and delicious meals. For example, leftover roasted chicken can easily become a taco filling or a sandwich topping. Another favorite of mine is using leftover grilled vegetables to create healthy sauces and soups by adding a quality stock, or mixing them with various types of pasta, quinoa, or rice. For these dishes, I also enjoy adding freshly chopped herbs of choice and a drizzle of Greek olive oil... before savoring another quick and tasty meal!
Essential Kitchen Tools for One
Having the right tools can enhance your solo cooking experience. Here are a few essentials:
1. A Good Chef’s Knife

Investing in a quality chef's knife can drastically cut your prep time. A sharp knife
allows for efficient cutting and increases your confidence in the kitchen.
2. Cutting Boards
Apart from having one big wooden cutting board I use several different colored smaller cutting boards that help me maintain a tidy workspace. It makes handling ingredients easier, especially in smaller kitchens.
3. Versatile Pots, Pans and Oven Proof Dishes
It's always good to have various sizes of pots, pans and ovenproof dishes but I always say having as a medium-sized skillet is a must-have. It's ideal for a range of cooking styles—from sautéing vegetables to making a quick stir-fry as well as cooking something in the oven. My favorite type is a cast-iron skillet that retains heat well and ensures even cooking!

4. Storage Containers
Keep your kitchen organized and fresh with various storage containers. Choose sizes that fit different meal portions to manage leftovers easily.

Breakfast eggs for Lunch or Dinner?
Who says breakfast is just for the morning? I really like eggs pretty much any time of the day as they are such an easy & nutritious meal to prepare when cooking for one.
Presently my favorite omelet is the one seen in the photo below that is filled with stir-fried sliced scallions or onions, bell pepper and cheese or if you prefer with cheese, spinach, and tomatoes. Pair it with toast for a satisfying meal any time. YUM!

Another recent really quick breakfast meal that I also really like for a light lunch or dinner is Feta cheese cooked with one or two eggs in the microwave. Actually, as you see from the photos below, for one person, you will need 2 eggs + 50 g of low-fat Goat Feta cheese and a wee bit of oil to brush the individual baking dish.
Before cooking, cover the baking dish with plastic wrap and cook for about 2 minutes or less in the microwave. Take out of the oven (don't forget wearing gloves as the container will be hot) . . . and then mash the cheese with a fork and mix with the cooked eggs. Season with pepper or chili pepper flakes and then serve on toast or with seed crackers . . . or anything else you may fancy!

If you struggle to find motivation, turn cooking into a joyful activity. Play your favorite music or listen to a podcast while you cook. Invite a friend to join you virtually and make it a fun experience.
