Last month, in preparation for a Hiking and Cooking program for friends on Andros Island here in Greece, I came up with this uncomplicated, scrumptious-tasting Mediterranean dish that looks impressive and is so easy to make.
You can of course play with the ingredients to your liking and if figs are not available or in season, I have done this type of recipe with apricots and/or peaches and/or plumbs. If you like you can also change the seasoning and use more fresh herbs, sugarless dried fruit and various types of seeds.
The basic recipe is provided below, but I recommend using your imagination and changing the recipe to your liking. I'm pretty sure that you and everybody else you serve it to will adore the results.
Ingredients for recipe (approx. per person)
½ - 1 tbsp. olive oil
100 g Feta cheese (I use low fat Feta cheese - 12%fat)
1 - 2 figs
Pistachio kernels – chopped to taste
Walnuts – chopped, to taste
Garlic powder, to taste
Flaked chili pepper or coarse black pepper, to taste
½ tbsp. honey or honey mixed with balsamic cream or vinegar, to taste
Preparation Method
Preheat oven 175 – 180C
Lightly grease a baking dish and place one or two pieces of Feta in baking dish.
Cut figs in quarters and distribute evenly over cheese.
Sprinkle with olive oil & seasoning and place baking dish into hot oven.
Bake in Oven for about 20 minutes, or until figs are roasted and the Feta cheese has softened but not lost it shape.
Top with nuts and drizzle with honey or honey mixed with balsamic cream or vinegar of choice, to taste.
Serve immediately with multigrain crackers, toast or roasted bread slices.
Tip!
If you like you can serve it in the baking dish, directly from the oven or as per photos, you can serve it plated on crackers or with toast or bread of your choice.
